Siding estimates hide the most work in prep. Make prep visible and the price makes sense.

Why break out the weather barrier?

House wrap and flashing are what keep water out; they're also what a cheap bid skips. A separate line makes the difference visible.

Why separate trim?

Corners, channels, and soffit can be a third of the material cost. Listing them prevents the assumption that "siding" included everything on the wall.

Why a sheathing allowance?

Rot behind old siding is common and invisible. A stated rate turns it into a known cost.
